Black Bean Veggie Burgers Recipe (serves 4)

In a mixing bowl, add and toss
1/4 cup olive oil
2 sliced sweet potatoes
1 tsp garlic powder
2 tsp chili powder
1 tsp kosher salt

Place on a pan lined with aluminum foil, skin-side down, bake at 375º F for 20-25 minutes until crispy.

in a pan saute

1-2 tbsp olive oil
1/2 finely chopped onion, saute 1 min, then add
1/2 cup grated carrots
1/4 cup grated zucchini
2 cloves minced garlic
pinch of salt

saute together, set aside.

In a large mixing bowl add 1 can of black beans (non rinsed), mash until a paste forms, add 1 more can of beans, mash lightly to preserve texture and color.

Add the cooked vegetable
2 tsp chili powder
1 tsp cumin
1 egg
1/2 cup oat flower
1 tbsp chopped cilantro
1 tsp kosher salt
mix until the batter forms. Mold into patties, fry in a hot cast iron pan, 5 minutes each side.
Serve on favorite bun with condiments.

The Veggie Burger | #BeatMyBurger Ep. 8

This gorgeous vegetarian burger begins with a soft, freshly baked sourdough roll and then we spread on plenty of zesty chickpea hummus blitzed up with toasted sesame oil. The pattie itself is a spiced and herby sweet potato falafel and nestled on top of that is a split roasted red romano pepper filled with oozing goats cheese. For the fresh, healthy crutch to top the burger we offer a tossed salad made with julienne of tomato, yellow pepper and onion, lightly dressing in lemon juice, extra virgin olive oil and picked leaves of coriander.

Veggie Burgers // Recipe Video

So it took me a little longer to edit this video than I thought it would, so it’s going up a day late. Hope everyone enjoys.

This recipe is a combination of two of my favorite burger recipes. My goal was to create a burger that had my favorite aspects of both recipes, while also simplifying some of the ingredients and steps. Those recipes can be found here:

This recipe made about 10 big burgers. If making these for food prep, bake them before freezing and then thaw and recook however you like.

Ingredients:

1 1/2 pounds button mushrooms
1/2 pound eggplant, in one inch cubes
1/4 cup olive oil
Salt and pepper to taste
1/2 large onion, chopped fine (about a cup)
1 large celery rib, chopped fine (about 1/2 cup)
1 medium clove garlic, minced
3/4 cup dry pearl barley
1 cup walnuts
1 tbsp chili powder, cumin powder, and smoked paprika
1/2 tsp salt and pepper, more for cooking
1 (14-ounce) can garbanzo beans, drained and patted dry on paper towels
1/4 cup flour
1 tbsp chia seeds
1 tbsp soy sauce
1.5 cups bread crumbs
1/8 cup barbecue sauce

Instructions:

Preheat oven to 350 F
Put mushrooms and eggplant on tray and mix with 1 Tbsp olive oil and salt and pepper to taste and cook for 45 minutes
While mushrooms and eggplants are cooking, cover barley or rice with water in a pot and boil until tender
Cook celery and onions in a pan until tender, not brown
Turn off the heat, and stir in minced garlic, set aside in large mixing bowl. Add barley when cooked
In same pan, warm walnuts until fragrant and just starting to darken
Remove mushrooms from oven and let cool
Add walnuts to food processor with coconut sugar, smoked paprika, cumin, chili powder, salt and pepper
Blend into a fine powder, and add to the bowl with the barley
Add mushrooms and eggplant into food processor and pulse 8 – 10 times (you may need to do this in batches). Add to bowl
Add half can of garbanzo beans into processor with soy sauce, flour, and chia seeds. Blend into a smooth paste. Add to bowl
Pulse rest of the garbanzo beans 5 – 6 times. Add to bowl
Add breadcrumbs and barbecue sauce to mixture. Mix thoroughly
If mixture is too wet add more breadcrumbs, if it is too dry or crumbly, add more BBQ
Cook in oven at 350 F for 20 minutes, flipping once; pan fry, or toss on the grill and cook until darken the outside and cooked through
Add to a sandwich with all your favorite fixings!

Veggie Burger Recipe
Serves 4. To make this recipe vegan, substitue cheese and cream spread for vegan mayo.

4 ea. 3 ounces (90g) burger bun
6 ounces (180g) blue cheese, gorgonzola or Roquefort.
Salad greens, washed
Crushed walnut, pecan or hazelnut.

Roasted Eggplants
2 ea. Japanese eggplant
1 Tbsp (15ml) extra virging olive oil
1 Tbsp (15ml) water
Salt and pepper.
Sear with: 1 Tbsp (15ml) extra virging olive oil
Deglaze with: 2 Tbsp (30ml) balsamic vinegar.
Method
Trim off eggplant stems, divide in half and cut lengthwise. Season with olive oil, salt and pepper. Arrange eggplant halves in a shallow dish, add about a tablespoon of water, seal well with plastic wrap and microwave for 6 to 7 minutes (you dont want them to be fully cooked). Carefully, remove the plastic wrap and drain the eggplant slices on papper towels. In a hot pan, drizzle olive oil and sear eggplant slices (flesh side down) for about 15 minutes on medium high heat or until light brown color. Deglaze pan with balsamic vinegar and continue to cook for an additional 5 minutes or until eggplants get a nice caramelization. Flip and turn heat off and let rest in the pan to cool down slowly.

Red Onion Marmalade*
3 ea. red onion, peeled and thinly sliced
2 Tbsp (30ml) extra virging olive oil
Salt and pepper to taste
3 Tbsp (45ml) red wine vinegar.
Method
Cook thinly sliced red onions in olive oil, salt and pepper for about 15 minutes on medium low heat; covered. Stir mixture a couple times during cooking. Remove lid and deglaze with red vinegar; cook for an additional 10 minutes; uncovered. The onion mixture turns into marmalade when any remaining moisture left from the onions and vinegar is gone, then the natural sugar from the onions begins to caramelize within. Set aside.

1/4 CUP BOILED PEAS
1/4 CUP BOILED CHOPPED LONG BEAN
1/4 CUP CHOPPED ONION
1 TEASPOON CHOPPED GREEN CHILI
1 TEASPOON SALT
1/2 TEASPOON BLACK PEPPER
1/2 TEASPOON GARAM MASALA POWDER
1/4 TEASPOON CUMIN POWDER
1 TABLESPOON CORIANDER
1/4 CUP BREAD CRUMB
1 TEASPOON LEMON JUICE
MIX IT TO BRING ALL TOGETHER
TAKE SOME MIXTURE TO MAKE EACH PATTY
3 TABLESPOON CORN FLOUR
3 TABLESPOON PLAIN FLOUR
MIX SOME WATER TO MAKE THIN BATTER
DIP EACH PATTY INTO THE FLOUR BATTER
ROLL THE PATTY INTO THE BREAD CRUMB
KEEP IT IN THE FRIDGE FOR 15 MIN.
FRY THE PATTY UNTIL BOTH SIDE TURN BROWN
BURGER BUNS
TAKE SOME BUTTER
TOAST THE BREAD
TOMATO SAUCE
LETTUCE
PLACE THE PATTY
TOMATO SLICE
ONION RING
CUCUMBER SLICE
MAYONNAISE
